Southwest France

The foundation is premium base wines sourced from exceptional French vineyards. Each wine is carefully selected, from cooler sites where altitude and moderating Atlantic and Pyrenean influences support slow, even ripening, natural fruit concentration and excellent acid retention.

Chardonnay's naturally crisp acidity and fine mineral backbone provide structure to the wine through alcohol removal. In a red like Tempranillo, that job falls to tannin. In a white, it falls to acidity.

How it's unmade

We start with real wine, premium Chardonnay from Southwest France chosen for its acidity, then blended for harmony. Alcohol is lifted out at low temperature by vacuum distillation, aromatics are captured and returned, and the wine rests in bottle before release.

    Start with wines that are already complete.

    The foundation is premium base wines sourced from exceptional French vineyards. Each wine is carefully selected, from cooler sites where altitude and moderating Atlantic and Pyrenean influences support slow, even ripening, natural fruit concentration and excellent acid retention.

    Blend

    Built for harmony, not replication.

    A classic style French Chardonnay with savoury complexity and depth is blended with a vibrant and fruitful component that elevates the aromatics and increases natural palate sweetness.

    Vacuum distillation

    Alcohol out, aromatics in.

    Alcohol is lifted out at low temperature by vacuum distillation. Aromatics are captured before distillation and returned afterwards, so nothing is lost that does not have to be.

    Bottle rest

    Two months to settle.
