At Paragraph, winemaking always comes first. Alcohol removal is not a shortcut — it is a discipline. Our approach is simple: if the wine is not great before alcohol is removed, it will never be great after.

01 — The Foundation

Exceptional Base Wine

Alcohol removal leads to a lighter aromatic expression, which is why quality must begin at the source.

Paragraph works exclusively with wines selected for their natural expressiveness, structural depth, and ability to retain character after dealcoholisation. We source from premium Spanish vineyards, with a strong focus on elevated sites above 700 metres and low-yielding old vines aged between 30 and 50 years.

The final wine combines base wines matured for between 2 and 4 years prior to blending, combining structure and harmony with power and aromatic freshness.

02 — Technology

Paragraph uses low-temperature vacuum distillation — one of the gentlest and most aroma-preserving methods available.

An integrated aroma recovery system captures and protects the wine's delicate aroma during the process, before being carefully reintegrated. This allows the wine to retain complexity, identity, and a sense of place, without the addition of external ingredients.

After dealcoholisation, the wine rests in bottle for a minimum of two months, allowing texture and aromatics to settle into a more balanced final expression.
